Instant Pot Pork Back Ribs
With the temperatures rising, making ribs in an electric pressure cooker is faster and easier than heating up the house or standing over the grill for hours. Most people cook ribs low and slow in the oven, on the grill, or in the slow cooker. This recipe is made in the Instant Pot in half the time. A few minutes on the grill (or under the broiler) carmelizes the BBQ sauce for that delicious summer flavor.

Ingredients

  • (1-2 lbs.) Pork Back Ribs
  • (1 C) Chicken Broth
  • (3-4 Tbsp.) BBQ Rub
  • (1/2 C) BBQ Sauce

Directions

Step 1: Place the trivet in the bottom of the Instant Pot (or use the steamer basket). This is to keep the ribs from sitting in the broth during cooking. Otherwise, the meat can get mushy.

Step 2: Add 1 cup of chicken broth to the bottom of the pot.

Step 3: Generously rub seasoning on the ribs. You can use the Organic Pork Seasoning sold at Wanda Farm or whatever BBQ rub you prefer.

Step 4: Place the ribs around the inside of the Instant Pot.

NOTE: You can even cook frozen ribs in the Instant Pot stacked on top of the trivet. If purchasing unfrozen ribs, cut them into chunks that will easily fit in the Instant Pot before freezing. Lay them side-by-side in a freezer bag then place them into the freezer.

Step 5: Close and seal the lid and set the Instant Pot on Manual for 35 minutes. You can also cook the ribs in a slow cooker on high for 4 hours or low for 8 hours or until fork tender.

Step 6: Once the Instant Pot beeps and finishes the 35-minute cook, do a quick pressure release and open the lid.

Step 7: Place the ribs on a pan and brush generously with BBQ Sauce. Place on a hot grill or under the broiler for 5 minutes or until the BBQ sauce is caramelized. Then serve while they are hot and enjoy.

NOTE: We often serve ribs with baked potatoes and salad. Put the potatoes into the oven or on the grill approximately 10-15 minutes before starting the ribs so they are done at the same time. Then serve while they are hot and enjoy.
