Uncured Smoked Ham Roast
An uncured smoked ham roast is a tasty nutritious option for the holidays. It is lower in sodium and calories and doesn't have any added nitrates or preservatives. It's full of flavor, not water and salt. This simple honey mustard glaze adds a hint of sweetness your family will want again and again.

Ingredients

  • (1/3 C) Dijon Mustard
  • (1/4 C) Local Honey
  • (4-5 Cloves) Garlic, minced
  • (1 tsp.) Cardamom
  • (2 Tbsp.) Apple Cider Vinegar
  • (1/2 tsp.) Ground Ginger
  • (5 lb.) Smoked Ham Roast (Small)
  • (1/4 C) Water

Directions

Step 1: While preheating the oven to 325*F, mix everything together in a bowl except the Ham Roast and water. Whisk the glaze until well combined.

Step 2: Place ham face down in a baking pan and add 1/4 C water to the bottom of the pan. If using a probe thermometer, insert it into the ham. Make sure it isn't touching the bone. I used a probe thermometer and a 9x12 stoneware baking dish with a lid.

Step 3: Brush 3/4 of the glaze all over the ham then cover the pan with foil or a lid. Reserve 1/4 of the glaze to use part way through the cooking process.

Step 4: Bake at 325*F for approximately 1 hour and 20 minutes or until internal temperature reaches 144*F (approximately 20-25 minutes per pound). After approximately one hour (when the ham is 119*F) brush the ham with the remaining glaze and put it back into the oven uncovered.

Step 5: When the ham reaches 144*F, remove it from the oven and allow it to rest for 10 minutes before slicing. Then serve and enjoy!
