- (1) Onion
- (7 oz) Chipotles in adobo sauce
- (2) Garlic
- (2 Tbsp) Apple cider vinegar
- (1 Tbsp) Chili powder
- (1 tsp) Cumin
- (1) Pineapple
- (1 C) Broth
- (3 lb) Pork shoulder roast
1.Puree onion, chipotles, garlic, vinegar, chili powder, cumin, diced pineapple and broth in a food processor or blender, pulsing for about 1 minute or until smooth.
2.Put the pork in the slow cooker.
3.Pour blended mixture over pork.
4.Cover pot and cook on low heat for 8 hours.
5.Once the pork is cooked, shred with a fork. ENJOY!
